Mui Choy, Mei Cai (梅菜)
- Dried preserved mustard green is also known as sweet and salty mui choy. The salted mui choy has a layer of salt and has a dark greenish colour, whilst the sweet mui choy has a yellowish brown colour.
- Sweet mui choy is used to prepare the dish braised pork with mui choy (also known as Mei Cai Kou Rou 梅菜扣肉). Mixing some salted mui choy to the dish will enhance its taste.
- Mui choy is preserved using sugar or salt, unlike salted vegetables where it is submerged into a saline solution for preservation.
- The best mui choy comes from Huizhou, Guangdong province, China.

Preparatory methods
As the mui choy is preserved using sugar or salt, give it a good wash and soak them in water for half a day. If possible, change out the water halfway through soaking. Drain out the water, squeeze dry, and chop it up into smaller pieces.
