Bak Chang (Chinese Rice Dumplings)
Salted egg is added to Bak Chang, the chinese rice dumplings that was consumed during Dragon Boat Festival (Duanwu jie 端午节).
Moon Cakes
Salted Egg Yolk is used to make Chinese Moon Cakes, which are consumed during the Mid Autumn festival. The salted egg yolk is wrapped in a paste and pastry skin, where the round egg yolk represents the full moon.

How are salted eggs made?
There are 2 main ways to make the salted eggs commercially, by packing in mud or by using a commercial vacuum seal. The preferred way is the traditional method where the duck eggs are covered in a layer of mud. The mud is made up of food grade salt, clean sticky dirt, plant ash and water which bind them all together. The mud creates a seal to keep out bacteria.

How to wash away the mud on the salted egg?
Using both your hands, slowly rub away the mud, and when most of the mud is off, wash the egg under running tap water. Be careful not to crack the shell when washing.

Do we need to cook the egg before eating?
Yes, the egg white is still raw, and it’s recommended to cook the salted egg in boiling water for at least 10 minutes.

Will the salted egg turn bad and how to tell that the egg is bad?
Yes, some of the eggs will turn bad due to various reasons like high temperature, cracked egg shell, etc. The egg will emit an unpleasant smell if the egg has already gone bad, after you cut open the egg. It’s difficult to tell unless you cut open the egg.

It’s best to keep the salted eggs in the fridge, as this will prolong the storage up to a few weeks.
