Most of the salted vegetables that we eat in Singapore comes from Chaozhou (潮州) and/or Shantou (汕头) in China. They are from the Guangdong Province in China, where some of our ancestors travelled from China to Singapore. The salted vegetable from these regions are commonly known as chaoshan salted vegetables ( 潮汕咸菜), which is one of the 3 treasures of the region. SGDried Goods carry all 3 treasures!
The vegetable used to make the salted vegetable is called mustard (大芥菜), and the process called pickling is used to preserved it.
What can salted vegetables be used for?
Salted Vegetable Duck Soup

Teochew Steam Fish
Teochew likes to add salted vegetables, sour plums, ginger, tomato, shitake mushrooms and some chilli to steam fresh fish. These ingredients can enhance the taste of the steamed fish. Recipe can be found here.
Salted Vegetable Fish Soup
Many fish soup hawkers will add salted vegetables to their fish soup to enhance the taste of the soup. Similar to salted veg duck soup, it is best eaten together with plain white rice.
Preparatory methods
Soak the salted vegetables in water, as they have been pickled in a large amount of salt. You may adjust the soaking time according to your preferences, as soaking for too long makes it tasteless.
