Sour Pickled Green Mustard

Sour mustard is traditional pickled Chinese mustard, where pickling is used to preserve the mustard. For Thai and Lao versions, they are fermented in a rice brine. Fermentation and prickling are different. Fermentation involves encouraging yeast/ bacteria growth without the addition of acidic ingredients. Pickling involves preservation using acid like vinegar. Preparatory methods 

  1. Drain out the water used during pickling. 
  2. Soak it in water for at least half an hour to reduce its sourness.
  3. Drain away the water.
  4. Cut into small pieces according to your preference.
