  • Dong cai (冬菜) is a type of preserved cabbage, where the cabbage is finely chopped and preserved using salt. The best dong cai is from Tianjin, China.
  • Dong cai is commonly used in Singapore as a condiment to enhance the flavours in soups, stir-fry, and steam dishes. You can find dong cai added to fish ball noodles in Singapore.
  • Dong cai is made of salt, cabbage and garlic. It does not contain any other artificial preservatives, as salt is used as a natural preservative.

    Preparatory methods 

    1. Give the dong cai a quick rinse in water to reduce its saltiness.
    2. It can be added directly to your dishes, as it does not require to be cooked.   

     

    What can it be used for?  

    1. Steamed pork patty with preserved vegetables
    2. Condiment for soups, stir-fries.

     

    How is it sold? 
    It is available in packets of 100g or 300g, or in small jars of 150g. It is recommended to select the small jars as it is less salty. After opening the packet or jar, store it in the fridge to maintain its freshness.
